(IDAHO FALLS) – U.S. Senators Mike Crapo and Jim Risch are fighting legislation aimed at reducing starchy vegetables like potatoes in school lunches. The proposed amendment would prevent the Department of Agriculture from mandating the reduction of starch in schools nationwide. Federal health officials say potatoes could be linked to the rising childhood obesity with foods like french fries and tater tots. The amendment could be up for a vote as soon as this week.
