Tasty Tuesday: Jack-o-Lantern apple pie with puff pastry

Have some fun with the kiddos. Transform an ordinary apple pie into an amazing (and not to mention delicious) Jack-o-Lantern apple pie with puff pastry.

Ingredients

  • 1 refrigerated sheet of pastry puff dough
  • 1 Dollar Tree wooden pumpkin
  • 1 knife
  • 1 can of apple pie filling
  • 1 cookie sheet
  • 1 fork
  • green icing (with an extra small piping tip)

Instructions

  1. Start by unrolling your dough out flat. Place your pumpkin close to the edge and trace around it with a knife. (If you have a large cookie cutter you can use that as well, but I like to use what I already have). Make TWO cut-outs.
  2. Place your two large cut-outs on a cookie sheet. Cut a Jack-o-Lantern face out on one of the cut-outs, just as you would when carving a pumpkin.
  3. On the opposite one, place a heaping spoonful of apple pie filling in the middle. Place your Jack-o-Lantern face directly on top and line up your edges. Seal the edge by pressing it down with a fork, as shown.
  4. Bake in the oven at 425 degrees for 8 minutes.
  5. Once cool, make some vines and leaves at the top of your Jack-o-Lantern with your green icing.
  6. Serve and enjoy! Maybe with a scoop of vanilla ice cream?
