Three food trucks combining in new brick-and-mortar restaurant

REXBURG — Three food trucks are coming together to open their first brick-and-mortar location.
The Corndog Company, Lemon Smashers and Dip Stix are opening a physical location in the NorthPoint apartment building next to Cafe Rio at 76 West 2nd South Suite B in Rexburg.
In 2019, Michael O’Neal opened the first Corndog Company food truck in Idaho in Rexburg. The Corndog Company has expanded to five locations in eastern Idaho, and O’Neal is opening the first brick-and-mortar Idaho location.
He also owns the lemonade food truck Lemon Smashers, which has a location in Idaho Falls and Pocatello. O’Neal also franchises the ice cream shop Dip Stix, which has one other location in Idaho Falls with a different owner.
He says one of the biggest challenges with running food trucks in Idaho is having to close down during winter months. With the new storefront, he is excited to serve customers year-round.
“Hopefully people will be able to satisfy their cravings anytime of the year,” O’Neal said. “It’s exciting, and we’re hoping that this starts a chain reaction of putting storefronts throughout the rest of eastern Idaho as well.”
The grand opening will kick off Friday, Jan. 17 at 11 a.m. and will run until midnight.
The first 50 people to purchase an item will receive a prize, which can include T-shirts, gift cards or hats.
On top of that, every patron that comes in from Friday to Saturday will be entered into a drawing for a gift basket with several items from local businesses.
They will also offer a 10% discount to students who present a school ID card when they come.
“We feel like we have a pretty decent following with the Corndog Company, and we’re trying to just collaborate with these three businesses that complement each other very well and have it offered to everybody year round,” O’Neal said.
