Holy cacao! New Rigby eatery offers delicious twist on healthy eating

RIGBY — Among the plethora of pizza shops and banks in Rigby is a new eatery offering healthier options, like smoothie bowls, artisan toasts and smoothies.
Gaia Bowls opened last year at 173 East Main Street, Ste. 2. It’s next door to The Venue and is owned by the same people. Shawn Johansson and Callie Henderson are the owners, and Ashley Henderson is the manager.
EastIdahoNews.com sat down with all three of them this week to sample some of the menu, which you can watch in the video above.
The first item is a crowd favorite. It’s a bowl called Holy Cacao! It’s served with cacao and a coconut base, granola, banana, strawberry, almond butter and hemp hearts. You can add protein powder to any of the bowls, as well. Delicious!
Among the menu of artisan toasts, we tried avocado crunch. It’s sourdough bread with an avocado spread, red pepper flakes, pepitas, everything bagel seasoning, and pink Himalayan salt. The crunch of the pumpkin seeds on top, combined with the red pepper, gives it a nice kick!
Fit Fuel Toast is another customer favorite. It’s your choice of sourdough or gluten-free bread with smashed avocado and whipped cottage cheese, sliced egg and everything bagel seasoning.
If you’re craving a sweet option, there’s also Sweet Tooth Toast with Nutella, fresh strawberries and almond slices.
We finished our visit with two smoothies — Green Goddess and Jacked Cacao. Green Goddess has almond milk, vanilla protein powder, spinach, banana and mango. It also includes spirulina, a blue-green algae that’s often touted as a superfood, and collagen. In addition to being nutritious, it’s surprisingly sweet and mouth-watering.
Jacked Cacao is a peanut butter, chocolate lover’s dream! Among the main ingredients are hemp hearts and collagen. It’s loaded with 38 grams of protein. Just one taste will leave you wanting more.
