Use leftovers to make this tasty comfort food

One of my favorite dishes is one I make out of leftovers. Anytime I make a roast, I can’t wait for the following night’s meal. That’s because I always make a large enough roast, so I can create one of my all-time favorite comfort foods — home-style hash.
It is so simple and hearty and has the delicious homey flavors I love. This dish is one that my grandmother made out of necessity, but one I make because it is simply full of slow cooked tender meat and the combination of bacon, potatoes, eggs, and other savory flavors. I will even add some of the leftover gravy to make it even more flavorful. It’s a basic dish that is has been a family favorite for decades.
