New Food Truck Fest coming to Pocatello

POCATELLO — A new Food Truck Fest is gearing up to serve local street food favorites and family fun on Yellowstone Avenue all summer long.

Kicking off June 6, the weekly event will run every Friday from 4 to 9 p.m. (weather permitting) in the U-Save parking lot between Xtreme Car Wash and Goodwill.

Organized by a group of local food truck owners, the fest aims to bring the community together with great food and a lively atmosphere.

Karleigh Ray, one of the organizers and owner of Dip’d Food Trailer, said the Food Truck Fest is to give food trucks and the community a consistent, welcoming place to gather on a warm summer night.

“We needed another night for food trucks, and what better night than Friday night when people are out or don’t want to cook dinner,” Ray said. The goal is to offer families, friends, and foodies a fun way to end the workweek.”

The event’s main sponsor is Rails West Federal Credit Union, which purchased the picnic tables. Local businessman Phil Meador donated canopies and the use of the U-Save parking lot, providing plenty of space for food trucks, patron parking, and an eating area.

Food Truck Fest will feature rotating vendors so attendees can expect something new each week. Some nights may include live music and other family-friendly entertainment.

Some of the participating food truck vendors so far include Dip’d, Sticks and Scones, Smokin’ Buds, Camille’s Crepes, Wild Noodle, The Corndog Co., El Torito Taqueria, The Kernel, Woodland Orchards, Main Squeeze, Loaded, and We Got This-Dutch Oven.

“If all us truckers can pitch in a little, it’s amazing what we can do,” Ray concluded.
