U.S. District Judge Stephen Wilson ruled that the prohibition on the delicacy violates U.S. poultry regulations in a case brought by foie gras producers and restaurants.

It was back in 2004 that then-Governor Arnold Schwarzenegger signed a law to ban the sale of foie gras in California, taking the side of animal rights activists who alleged it was cruel to run a tube inserted into the esophagus of geese and ducks to fatten their livers.

Schwarzenegger gave producers until 2012 to find an alternative before enforcing the law. They came up with no new method, prompting the ban.

As soon as Judge Wilson delivered his decision, several California restaurants said they would immediately put foie gras back on their menus.
