East Idaho Eats: Gator Jacks has sandwiches with a southern flare
Published at | Updated atREXBURG — Louisiana-themed eatery Gator Jacks boasts something for everyone.
Locals frequent the sandwich shop for its popular breakfast menu, the jambalaya and the imported alligator.
“When it’s breakfast time I have to have the breakfast burrito, it’s by far the best in town,” customer Kelly Weathersby said.
But most of all, customers know Gator Jacks for its signature southern-style sandwiches — the ones with the odd names.
“It’s quick, it’s easy, it’s fast, and it’s all fresh. It’s good,” customer Josh Hammond said.
Orders like “Kissin Kin” and “Somethins a Foul” may not sound appetizing, but they’re actually the names of tasty sandwiches. New co-owner Dylan Makemson says a customer favorite is the “De Mudder n Law.”
“It’s a turkey, bacon, avocado. It’s really good. Two out of three sandwiches that are ever ordered are the ‘De Mudder n Law,’” Makemson said.
Accompanying the sandwiches are side dishes such as Gator Bites — bite-sized baked potatoes loaded with cheese and bacon.
Makemson and his partner Dan Thornley, recently purchased the restaurant. They have added to the exciting menu, but still wanted to keep the traditional orders. Some new add-ons include mozzarella sticks, chicken tenders, loaded fries, and soon to come, beef brisket and Tri-tip steak.
The owners said they hope to create an environment to draw students from the nearby Brigham Young University-Idaho, while still appealing to locals. The possibility of karaoke nights may be coming to the restaurant in the near future.
“My business partner Dan and I decided that this was a fun fast paced environment where we could really succeed,” Makemson said.
